Today, we processed a 700lb longhorn cow, a 250lb longhorn calf, and a 420lb hog. All three were full service with some roasts for steak and jerky, and a lot of grind. Lots of grind!
We were done and cleaning up by 1:30, having started setting up at 9:00!
It's too early to be this cold! But the job still got done! 420lbs of potbelly with an amazing amount of fat broken down with 15lbs of grind made, 2 tubs of fat harvested, and plenty of good meat!
