Online Tutorials

We want you to be as informed as possible. If you choose to slaughter your own animal, we want you to be best equipped to get it done swiftly, easily, and cleanly!

Produced to give you the maximum amount of knowledge from afar, these videos can be viewed in your own home at your leisure. They are often cheaper than in-person classes, but they aren't interactive or hands-on like an in-person class would be.

ONLINE CLASSES

We will add videos to the selection available as we are able - creating them is a very time consuming process. Ultimately we will have a video class for every type of animal and breakdown.

In-Person Classes


We want you to be as informed as possible! If you want to slaughter your own animals, we want you to be best equipped to get it done swiftly, easily, and cleanly! The goal of these classes is NOT to teach commercial butchery. Instead the goal is to teach you how to butcher your animal, at your place, with tools you may already have on hand. No special commercial equipment necessary! In the end, we still teach traditional cuts as you may find in the store (plus many more you won't see in the store!), but in a simple and straight forward, low-impact, low weight-lift fashion. 

Periodically we offer classes on how to butcher small stock, where we teach you everything you need to know so that you can do the whole process yourself at your own home. Classes are located in Yoakum or Gonzales, and happen intermittantly. Contact us about scheduling your attendance to a class! The demand for these classes has caught us off guard! As a result we can't possibly keep the site updated with open classes. Please call or text to find out when the next available class is scheduled!

Some classes provide animal-oriented lunch. Some small animal classes, with high attendance levels may provide animal-type oriented snacks. 
All classes are BYOB non-alcoholic drinks. Please stay aware of weather, dress appropriately, high temperatures will mean you may need more drinks! 
Slip-resistant and water-proof shoes are recommended. If you plan to participate in hands-on knife-work, it is HIGHLY advised you bring a cut-proof glove that fits your non-dominant hand. (If you are right-handed, the glove goes on your left hand)

All classes are Children-friendly!

Please be aware that attendance to any class is a release of liability. We strive to provide and teach utmost safety! However, any activity involving live animals, large carcasses, and/or knives & firearms is inherently dangerous and we are not responsible for any injuries that may be acquired from attending or participating in any such class. Signs are posted on property regarding release of legal liability of personal safety when on-farm/ranch. All attending children must have legal guardian present and attentive.


















































CALF CLASS  $600/person

Demonstration of how to humanely kill an approx 500 lb calf. How to quickly and cleanly skin a calf. How to break a calf into the basic sub primal sections. Demonstration and guided participation of cutting subprimals into steaks, and stewmeat. Demonstration and participation of best practices of safely & effectively running a grinder to make ground meat. Demonstration and guidance in using a stuffer. Discussion and guidance in packaging types to include paper, vacuum seal, and chub bags. Ongoing Q&A, freezing and defrosting advice. Each participant is gifted a portion of the calf. 

$500 per person / max 6 person class
Calf Class runs approx 7-9 hours, provided lunch is field-cooked from the calf itself.

 Will be held on the ranch the grass fed calf will be coming from in Dreyer, Texas.  Call for open schedules
PIG CLASS $450/Person

Demonstration of safe & humane kill. Discussions on risks of ricochet dangers. How to quickly and cleanly skin a pig, break it into the 10 basic quarters, and how to process those quarters into meal sized portions! Demonstration and participation in making chops, stew, and roasts. Demonstration and participation of safely & effectively running a meat grinder to make trimmings into ground meat. Demonstration and guidance in using a sausage stuffer. Discussion on packaging types to include paper, vacuum seal, and chub bags. Ongoing Q&A, freezing and defrosting advice. Each participant is gifted a portion of the pork.

 $350 per person/ max 6 person class. 
Class runs approx 4-5 hours.

RABBIT CLASS $85/Person

Demonstration followed by hands-on guidance. Humane killing of rabbits, skinning techniques, cutting into the various cuts. Ongoing Q&A, and cooking suggestions offered! 

$65 to participate in guided hands-on slaughter of a rabbit, and you take your pasture raised rabbit home. 

Class Held in Yoakum, Tx
Class runs approx 2-4 hours, lunch of rabbit -may- be provided with high enough attendance levels.
CHICKEN CLASS $75/person


 Demonstration followed by hands-on guidance. Chicken humane killing, skinning, chicken plucking, and cutting into the various cuts. Ongoing Q&A. Cooking suggestions also offered!

 $65 to participate in guided hands-on slaughter of a chicken, and you take your pasture-raised chicken home. 

Class runs approx 2 hours. With high class attendace chicken snack might be provided.

HUNTER'S SPECIAL/ 
SHEEP OR GOAT CLASS 
$350/ Person

This class is an excellent hunter's class, as sheep, goats, and deer are all very similar. A very good class for young hunters! Demonstration of humane kill. Demonstration of how to quickly and cleanly skin a small ruminant, and break it into the 10 basic quarters, and how to proccess those quarters into roasts and small cuts. Demonstration and participation of running a meat grinder to make trimmings into ground meat. Demonstration and guidance in using a stuffer. Discussion on packaging types to include paper, vacuum seal, and chub bags. Ongoing Q&A, freezing and defrosting advice. Each participant takes home an equal portion of the animal. 

$250 each, 4 person class 
Class held at Dreyer, Texas
Class runtime approx 4 hours.

Demonstration of how to cape an animal for a beautiful mount, using sheep/goat class - $50 extra

Full-body cape OR shoulder-mount are both options.
